About Zaza... and Marcelle

I’m Isabelle, «Zaza», a French Pâtisserie Chef, and like many of you, I love cakes!

 

Marcelle was my Grandmother and an endless source of inspiration for me. I always thought that when the day came that I started my own business, her name would be part of the adventure as a tribute to this special person.

I learnt from the best

I graduated ten years ago at the prestigious Ecole Nationale Supérieure de la Pâtisserie in Yssingeaux (France). From then on, I kept learning that very special art from the best, working for Michel Belin, a renowned chocolatier in France and Japan, or working as a Chef’s assistant working alongside world famous Pâtisserie Chefs in the very same school where I gained my diploma a few years earlier. During that time I had the opportunity to participate in a national Croquembouche contest for which I won a bronze medal.

After spending a year in London in an exquisite French pâtisserie, I had the honour of working with

Award-winning cake designer Anna Tyler,
founder of Anna Cake Couture here in Bristol.

Thanks to Anna, I discovered more of the art of wedding cakes for which I had developed a fond passion over the past few years while still pursuing my love for Pâtisserie by developing her gorgeous shop’s pâtisserie range in their first year of trading.

Since starting my own cake business in 2017, my aim has been to bring together the best of both worlds: the knowledge of French pâtisserie combined with the intricate details of British cake design.

My favourite cake flavours:

 

Anything that involves nuts and chocolate (I’m a simple girl, give me hazelnuts and chocolate any time of day).

My favourite part of cake making:

 

Creating new flavours combinations, and of course, the final touches of the decorating! That moment where a cake is finished never ceases to satisfy me, cake after cake.

My favourite food:

 

Croissants. I could write a full article on the best artisan croissants all around Bristol after having tried pretty much all of them.
